Description

This Air Fryer Chicken Burrito Bowl recipe features tender, flavorful chicken thighs seasoned with smoky chipotle peppers and aromatic spices, cooked quickly in the air fryer. Served with rice, black beans, shredded lettuce, avocado slices, and salsa, it makes a wholesome and vibrant meal perfect for lunch or dinner.

Ingredients

Scale

Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 3 garlic cloves minced
  • 1 tablespoon chipotle peppers in adobo sauce
  • 1 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1 lime, juiced

To Serve

  • Rice, for serving (about 3 cups cooked)
  • Black beans, for serving (about 1 1/2 cups cooked or canned, drained and rinsed)
  • Shredded lettuce, for serving (about 2 cups)
  • Avocado, sliced, for serving (1 medium avocado)
  • Salsa, for serving (1/2 cup)

Instructions

  1. Prepare the Marinade: In a large bowl, combine the chicken thighs with kosher salt, black pepper, minced garlic, chipotle peppers in adobo sauce, ancho chile powder, ground cumin, dried oregano, and olive oil. Mix well to evenly coat the chicken with the seasoning.
  2. Preheat the Air Fryer: Place the crisper plate into the COSORI air fryer basket. Select the preheat function and adjust the temperature to 385 degrees Fahrenheit. Press start/pause to begin preheating.
  3. Cook the Chicken: Once preheated, arrange the seasoned chicken thighs on the crisper plate in a single layer. Select the air fryer function, set the timer for 16 minutes, and start cooking. Flip the chicken halfway through if desired for even cooking.
  4. Rest and Slice: When the cooking cycle completes, remove the chicken thighs from the air fryer. Squeeze the juice of 1 lime over the hot chicken and let it rest for 5 minutes to allow juices to redistribute. Then, slice the chicken into strips.
  5. Assemble the Burrito Bowls: In serving bowls, layer cooked rice and black beans as the base. Top with sliced chicken, shredded lettuce, sliced avocado, and a dollop of salsa. Serve immediately and enjoy.

Notes

  • Adjust the amount of chipotle peppers and ancho chile powder to control the spice level.
  • Use white or brown rice according to preference; cooking times will vary accordingly.
  • For a gluten-free meal, ensure all seasonings and salsa are gluten-free certified.
  • Leftover chicken can be stored in the refrigerator for up to 3 days and reheated.
  • Adding fresh cilantro or a sprinkle of shredded cheese makes a great garnish.
