Description

Crispy and golden air fryer zucchini fries seasoned with Italian herbs and parmesan cheese, perfect as a healthy appetizer or snack. These fries are easy to make and come out perfectly crunchy without deep frying.

Zucchini Fries

  • 2 medium zucchini, cut into 3 inch x 1/2 inch sticks

Breading & Seasoning

  • 1/2 cup all-purpose flour
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 large eggs
  • 1 tbsp water
  • 1/2 cup Italian breadcrumbs or panko bread crumbs
  • 1/3 cup parmesan cheese, finely grated
  • Cooking spray


Instructions

  1. Prepare Zucchini: Slice your zucchini into 3 inch sticks, about the size of a french fry, ensuring even pieces for consistent cooking.
  2. Mix Flour Seasoning: In a large bowl, combine the all-purpose flour, Italian seasoning, salt, and pepper, stirring to blend all ingredients well.
  3. Prepare Egg Wash: Whisk together the two eggs and 1 tablespoon of water in a medium bowl until the mixture is a uniform pale yellow color.
  4. Combine Breadcrumbs and Cheese: In a separate bowl, mix the Italian breadcrumbs with the finely grated parmesan cheese.
  5. Coat Zucchini: Dip each zucchini stick first into the flour mixture, shaking off any excess flour. Then dip into the egg wash, followed by coating thoroughly with the breadcrumb and parmesan mixture. Repeat with all zucchini sticks.
  6. Prepare Air Fryer: Spray the bottom of the air fryer basket with cooking spray. Arrange the coated zucchini fries in a single layer without touching, then spritz the tops with more cooking spray.
  7. Air Fry: Cook the zucchini fries at 385 degrees Fahrenheit for 10 minutes until they are golden brown and crispy.
  8. Serve: Remove fries from the air fryer and enjoy immediately with your favorite dipping sauce if desired.

Notes

  • Do not freeze zucchini fries due to high water content which leads to sogginess upon defrosting.
