Scale
Main Ingredients
- 1 head cauliflower chopped into small florets (about 3 cups)
- ¼ cup all-purpose flour
- ¼ cup Italian breadcrumbs
- ½ cup grated parmesan cheese
- 1 large egg
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Olive oil for frying
- Chopped green onions for garnish
Instructions
- Steam the cauliflower: Bring a large pot of water to a boil. Steam 1 head of cauliflower chopped into small florets for 5-10 minutes or until tender but still mashable. Drain well and cool slightly.
- Mash the cauliflower: In a large bowl, mash the steamed cauliflower with a fork or potato masher until slightly chunky but not pureed.
- Combine ingredients: Stir in ¼ cup all-purpose flour, ¼ cup Italian breadcrumbs, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ cup grated parmesan cheese, 1 large egg, ½ teaspoon salt, and ½ teaspoon black pepper until well combined into a mixture that holds together.
- Form patties: Shape the mixture into small uniform fritters or patties, about 2-3 inches in diameter.
- Cook fritters: Heat olive oil in a skillet over medium-low heat. Fry the patties in batches for 6-8 minutes on each side until golden brown and crispy. Add more oil as needed during cooking.
- Garnish and serve: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Garnish with chopped green onions and serve warm with your favorite dipping sauce.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
- Reheat leftovers in a skillet or air fryer to maintain crispiness.
- For a gluten-free version, substitute all-purpose flour and Italian breadcrumbs with gluten-free alternatives.
- If you prefer a dairy-free option, omit the parmesan cheese or use a vegan cheese substitute.
- Adjust seasoning to taste by adding more garlic or onion powder if desired.
