Description

A delicious and easy Chicken Caesar Wrap featuring tender rotisserie or grilled chicken, crisp Romaine lettuce, juicy grape tomatoes, creamy avocado, and a tangy homemade Caesar dressing, all wrapped in warm tortillas for a perfect handheld meal.

Wrap Ingredients

  • 3 cups chopped rotisserie chicken or grilled chicken
  • 3 packed cups Romaine lettuce (about 2/3 head)
  • 1 cup heaping (6 oz) grape tomatoes, halved
  • 1/3 cup slightly packed, finely shredded parmesan cheese
  • 1 avocado, diced
  • 5 burrito size tortillas, whole wheat or white, warmed

Dressing Ingredients

  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 anchovy fillets, mashed finely to a paste (1 1/2 tsp paste)
  • 1 Tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic (1 clove)
  • Salt and black pepper to taste


Instructions

  1. Make the Dressing: Whisk together plain Greek yogurt, mayonnaise, olive oil, mashed anchovy paste, fresh lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic in a bowl. Season with salt and black pepper to taste and mix well until smooth.
  2. Prepare the Salad Mixture: In a large mixing bowl, add chopped rotisserie or grilled chicken, chopped Romaine lettuce, halved grape tomatoes, and shredded Parmesan cheese. Drizzle the prepared dressing over the mixture and toss gently with tongs until everything is evenly coated.
  3. Add Avocado: Add diced avocado to the salad mixture and gently toss again to distribute it evenly throughout the filling without mashing.
  4. Assemble the Wraps: Lay out the warmed tortillas on a flat surface. Spoon the salad mixture in a line down the center of each tortilla. Optionally tuck the ends of the tortillas in to contain the filling before rolling tightly into wraps.
  5. Serve: Cut each wrap in half and serve immediately as a fresh and satisfying meal.

Notes

  • For grilled chicken, preheat grill over medium-high heat to about 425°F. Pound chicken breasts to an even thickness and brush with olive oil. Season evenly with a mix of 1 tsp Italian seasoning, 3/4 tsp salt, 1/2 tsp black pepper, 1/2 tsp onion powder, and 1/8 tsp garlic powder. Grill about 4 minutes per side or until the internal temperature reaches 165°F.
  • You can substitute rotisserie chicken with leftover cooked chicken or store-bought grilled chicken for convenience.
  • Warm tortillas before assembling to make them more pliable and easier to wrap.
  • Adjust anchovy and garlic amounts in dressing according to preference.
  • To avoid soggy wraps, add avocado last and serve wraps promptly.
