Description

Pretzels and Chocolate

  • 24 whole pretzel rods (1 10/12 oz. bag)
  • 12 ounces semisweet baking chocolate, chopped
  • 1 tablespoon coconut oil or vegetable shortening
  • 1 teaspoon corn syrup

Toppings (Optional)

  • 3 ounces vanilla/white almond bark, chopped (for drizzling)
  • Sprinkles, crushed candy canes, toffee bits, mini candies, chopped nuts, crushed Oreos/cookies, shredded coconut, etc.


Instructions

  1. Prep: Line a very large-rimmed baking sheet or your counter with parchment paper and set aside. Prepare any toppings needed by placing them in bowls for easy access.
  2. Melt Chocolate: In a medium microwave-safe bowl, combine the semisweet baking chocolate, coconut oil or vegetable shortening, and corn syrup. Microwave at 50% power for 60 seconds, then stir. Continue microwaving at 50% power in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  3. Dip Pretzels: Transfer the melted chocolate to a glass or container for easy dipping. Quickly dip each pretzel rod into the chocolate, swirling to cover about two-thirds of the rod. Allow excess chocolate to drip off before placing the pretzel on the parchment paper.
  4. Toppings: Immediately sprinkle the dipped pretzels with your choice of toppings. Skip some if you wish to drizzle white almond bark on those later. If the chocolate thickens during dipping, reheat briefly at 50% power in the microwave and stir.
  5. Set: Let the chocolate-covered pretzels set at room temperature for about 30-40 minutes before proceeding. Avoid refrigerating to prevent streaks and pooling.
  6. White Drizzle (Optional): Place the white almond bark and ¼ teaspoon coconut oil or shortening in a microwave-safe bowl. Microwave for 30 seconds, stir, then continue microwaving in 15-second intervals, stirring between each, until melted but not too thin. Let it rest if necessary to thicken slightly.
  7. Decorate: Transfer the melted white almond bark to a plastic bag and snip a very small corner. Drizzle over desired pretzels, then immediately add toppings if desired.
  8. Final Set: Allow the pretzels to set at room temperature for about 30 minutes or until the drizzle has hardened before serving or packaging.

Notes

  • Use vanilla almond bark for the white drizzle as it melts smoothly, sets quickly, and provides a glossy finish. White chocolate is less forgiving and can scorch easily.
  • Avoid adding any water-based flavorings to the melted chocolate to prevent it from seizing. Use oil-based flavorings instead.
  • Feel free to get creative with toppings and flavor variations for personalized treats.
  • Do not refrigerate pretzels to speed setting, as it can cause chocolate bloom or streaking.
