Instructions
- Prepare Cake Base: Preheat oven to 350° F and grease a 13×9 baking pan. In a large mixing bowl, combine the red velvet cake mix, melted butter, and egg. Mix well with an electric mixer until blended into a batter suitable for a cookie-like base.
- Bake Cake: Pour batter into the prepared pan and spread evenly. Bake for 15 minutes. Remove from oven and let cool for 30 minutes or until completely cooled.
- Make Cream Cheese Layer: In a medium bowl, beat cream cheese and confectioners sugar together until smooth. Add ¼ cup milk and stir to combine. Fold in 8 ounces of whipped topping and crushed peppermint candies until evenly mixed.
- Assemble Cream Cheese Layer: Spread the cream cheese mixture evenly over the cooled cake layer. Refrigerate for 30 minutes to set.
- Prepare Pudding Layer: In a large bowl, whisk together the two pudding mixes with 2 ½ cups milk until thickened. Add green gel food coloring gradually (starting with 5-6 drops) until desired color is reached.
- Assemble Pudding Layer: Pour the green pudding over the cream cheese layer. Return the dessert to the refrigerator and chill for at least 2 hours until set.
- Add Final Topping: Before serving, spread the remaining 8 ounces of whipped topping evenly over the pudding layer. Sprinkle holiday colored sprinkles on top for decoration.
