Description
These Air Fryer Taquitos are crispy on the outside, cheesy on the inside, and packed with flavorful rotisserie chicken. Ready in just 23 minutes, they make a perfect appetizer, snack, or main course with a delicious Mexican twist.

- 1 tablespoon olive oil
- ½ cup yellow onion, minced
- 2 cups cooked, shredded chicken (rotisserie chicken recommended)
- 4 ounce can diced green chilies
- 1 tablespoon fresh chopped cilantro
- 2 tablespoons taco seasoning
- 2 cups pepper jack cheese, shredded
Taquitos
- 12 six-inch flour tortillas (fajita size)
- Nonstick cooking spray
Instructions
- Cook the Onion: Heat the olive oil in a large skillet over medium-high heat. Add the minced onion and cook for 4 minutes until softened and translucent.
- Prepare the Filling: Add the shredded chicken, diced green chilies, chopped cilantro, and taco seasoning to the skillet. Stir well and cook for an additional 2-3 minutes to combine the flavors.
- Add Cheese: Remove the skillet from heat and stir in the shredded pepper jack cheese until well mixed.
- Warm the Tortillas: Stack the tortillas and wrap them in damp paper towels. Microwave for 60 seconds to make them pliable and easier to roll.
- Assemble Taquitos: Place 3-4 tablespoons of the chicken mixture in the center of each tortilla. Roll tightly to enclose the filling. Repeat for all 12 taquitos.
- Preheat Air Fryer: Set your air fryer to 400°F and let it preheat.
- Arrange Taquitos: Place the taquitos seam-side down in the air fryer basket with space between them for proper air circulation. You may need to cook in two batches if your air fryer is smaller.
- First Cook: Spray the taquitos lightly with nonstick cooking spray. Cook at 400°F for 4-5 minutes.
- Flip and Cook Again: Open the air fryer, flip the taquitos using tongs, spray again with cooking spray, and cook for another 4-5 minutes until golden and crispy.
- Serve: Once cooked, serve the taquitos hot with your choice of salsa, sour cream, chipotle sauce, or guacamole for dipping.
Notes
- Make sure to roll the taquitos tightly to prevent them from opening during cooking.
- If taquitos are not crispy enough, cook them for an additional 1-2 minutes per side and ensure you spray them with cooking spray before air frying.
- If you don’t have an air fryer, bake taquitos in a preheated 425°F oven (convection setting if available) for 6-7 minutes per side, spraying them with cooking spray.
- For gluten free taquitos, substitute flour tortillas with corn or gluten free tortillas.
- To make spicy taquitos, use hot green chilies or add 2-3 teaspoons of hot sauce to the filling; cooking minced jalapeno or serrano peppers with onions also adds heat.
- You can easily customize this recipe with beef, cheese, soyrizo, or bean and cheese fillings following the same method.
- Prepared but uncooked taquitos can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
- Reheat leftover cooked taquitos in the air fryer at 400°F for 2-3 minutes per side.
- When cooking frozen taquitos in the air fryer, add 2 minutes to each side’s cooking time (5-6 minutes per side).
