Tomato Basil Topping

- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 4 slices mozzarella cheese
- 4-5 tablespoons balsamic glaze
Instructions
- Prepare Tomato Basil Topping: In a medium-sized bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to let the flavors meld.
- Prepare the Chicken: Pound the chicken breasts to an even thickness if desired; otherwise, leave as is. Coat each chicken breast evenly with 1 tablespoon olive oil.
- Season the Chicken: In a small bowl, mix together Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning mix evenly over the coated chicken breasts.
- Grill the Chicken: Preheat a grill to high heat. Grill the chicken breasts for 8 minutes on the first side, then flip and grill for another 8 minutes or until cooked through and no longer pink inside.
- Melt the Cheese: Once the chicken is cooked, place a slice of mozzarella cheese on top of each piece. Close the grill lid and allow the cheese to melt for about 1-2 minutes.
- Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes. Then top each chicken breast with the prepared tomato basil topping and drizzle with balsamic glaze before serving.
