Instructions

  1. Prepare the Pan and Feta: Spray a small frying pan or skillet lightly with cooking oil and crumble the feta cheese into the pan, making sure to cover even the outer edges of the pan so the feta crisps evenly.
  2. Sauté the Feta: Heat the pan over medium heat and allow the feta to sizzle and sauté for about 2 minutes, melting slightly without burning. This creates a crispy golden crust.
  3. Add the Egg: Gently crack the egg into the center of the pan on top of the melting feta. Season with dried oregano and red pepper flakes according to your preference.
  4. Cook the Egg: Allow the egg to cook to your desired doneness, whether you prefer a runny yolk or a more set egg, while the feta crust becomes golden brown.
  5. Prepare the Base: While the egg cooks, warm your tortilla on a gas stove, in the oven, or microwave. Smash the avocado and spread it onto the warm tortilla. Add a squeeze of fresh lemon juice for brightness.
  6. Assemble and Garnish: Carefully lift the crispy feta and fried egg from the pan using a spatula and place it on top of the prepared tortilla with smashed avocado. Garnish with pickled onions and drizzle with chili oil to finish.
