Description

  • 2½ cups cheddar cheese (shredded and divided)


Instructions

  1. Cook Ground Beef: In a large skillet over medium-high heat, add ground beef, onions, and garlic. Cook until the meat is completely browned and the onions are softened. Drain off excess grease to prevent a greasy casserole, then transfer the mixture to the Crock Pot.
  2. Combine Ingredients: Add diced potatoes, cheddar cheese soup, sour cream, taco seasoning, and 2 cups of shredded cheddar cheese into the Crock Pot. Mix everything together well to ensure flavors are evenly distributed.
  3. Slow Cook: Cover and cook on low for 4 hours or on high for 2½ hours until the potatoes are tender and the casserole is bubbling.
  4. Add Remaining Cheese: Sprinkle the remaining ½ cup of cheddar cheese evenly over the top, then cover and continue cooking for another 15 minutes, allowing the cheese to fully melt and form a delicious topping.
