Instructions
- Cook Ground Beef: In a large skillet over medium-high heat, add ground beef, onions, and garlic. Cook until the meat is completely browned and the onions are softened. Drain off excess grease to prevent a greasy casserole, then transfer the mixture to the Crock Pot.
- Combine Ingredients: Add diced potatoes, cheddar cheese soup, sour cream, taco seasoning, and 2 cups of shredded cheddar cheese into the Crock Pot. Mix everything together well to ensure flavors are evenly distributed.
- Slow Cook: Cover and cook on low for 4 hours or on high for 2½ hours until the potatoes are tender and the casserole is bubbling.
