Description

This Crockpot Chicken and Stuffing recipe is a comforting, hands-off meal perfect for busy days. Tender whole chicken is slow-cooked on a bed of diced carrots, onion, and celery, then topped with a flavorful butter and seasoning rub. Stove top stuffing is cooked in the savory juices and vegetables left behind, creating a delicious side all in one slow cooker.

Ingredients

Scale

Vegetables

  • 2 medium carrots diced
  • 1 small yellow onion diced
  • 2 medium celery ribs diced

Chicken and Seasoning

  • 5 pounds whole chicken
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika

Stuffing

  • 6 ounces box stove top stuffing mix (any flavor)

Instructions

  1. Prepare the Slow Cooker Base: Add the diced carrots, onion, and celery to the bottom of the slow cooker to create a flavorful bed for the chicken.
  2. Prepare the Chicken: Clean out the inside cavity of the chicken and discard any contents. Place the whole chicken on top of the vegetables in the slow cooker.
  3. Add Seasonings and Butter: Pour the melted salted butter evenly over the chicken. Sprinkle poultry seasoning and paprika on top, then rub the seasonings and butter all over the chicken skin. Optionally, add salt and pepper to taste.
  4. Cook the Chicken: Cover the slow cooker with the lid and cook on high for 6 hours to ensure the chicken is fully cooked and tender.
  5. Remove Chicken and Prepare Stuffing: Carefully remove the chicken and place it on a platter. Cover it with foil to keep warm. Drain and discard all liquid from the slow cooker except for 1.5 cups, leaving the vegetables inside.
  6. Cook the Stuffing: Add the stove top stuffing mix to the slow cooker with the vegetables and reserved liquid. Stir thoroughly to combine. Replace the lid and cook for another 10 minutes until the stuffing is tender.
  7. Final Serving: Fluff the stuffing with a fork. Slice the chicken as desired and serve on top or beside the stuffing. Optionally, place the chicken back in the slow cooker for presentation. Enjoy your comforting meal!

Notes

  • For extra flavor, Season the chicken cavity with salt and pepper before cooking.
  • You can substitute any flavor of stove top stuffing to vary the taste.
  • Leftover chicken and stuffing store well in the refrigerator for up to 3 days.
  • If you prefer, add garlic powder or fresh herbs to the seasoning rub for more aroma.
  • Make sure the chicken reaches an internal temperature of 165°F for safe consumption.
