Description

  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • 1 pound lean ground turkey
  • 2 teaspoons chili powder

  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 4 ounce can diced green chiles
  • 15 ounce can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 ounce jar salsa
  • 1 cup shredded colby jack cheese
  • 10 tortilla chips


Instructions

  1. Preheat Oven: Preheat your oven to broil to prepare for melting the cheese at the end of cooking.
  2. Cook Turkey: Heat a 12-inch skillet over medium-high heat and add 1 tablespoon of olive oil, swirling to coat the pan. Add 1 pound of lean ground turkey and crumble it while cooking.
  3. Sauté Vegetables and Season: Push the cooked turkey to one side of the skillet. Add diced yellow onion and red bell pepper on the other side. Sprinkle chili powder, ground cumin, garlic powder, smoked paprika, kosher salt, and freshly ground black pepper over the ingredients. Sauté the vegetables and continue crumbling and cooking the turkey until it is fully cooked through.
  4. Add Remaining Ingredients: Stir in the canned diced green chiles, drained and rinsed black beans, frozen corn, chopped cilantro, and salsa. Mix everything together thoroughly and heat through.
  5. Top and Broil: Spread 10 tortilla chips evenly over the skillet mixture, then sprinkle 1 cup shredded Colby Jack cheese on top. Place the skillet under the broiler until the cheese is melted and lightly browned, keeping a close eye to avoid burning.
  6. Garnish and Serve: Remove from the oven, garnish with additional chopped cilantro if desired, and serve immediately.

Notes

  • Use ground turkey breast for a leaner option to reduce fat content.
  • Substitute black beans with pinto beans if preferred.
  • For extra heat, add a diced jalapeño with the peppers and onions.
  • If you don’t have a broiler, you can place a lid over the skillet to melt the cheese or finish in a preheated oven at 375 degrees Fahrenheit for 5 minutes.
