For the Sauce:

  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons sriracha
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper


Instructions

  1. Cook the Chicken: In a large skillet over medium-high heat, drizzle 1 tablespoon of olive oil to coat the pan. Once the pan is hot, add the chicken pieces in an even layer. Season with salt and pepper and cook until lightly browned and fully cooked, about 5 minutes, stirring occasionally. Transfer the cooked chicken to a plate and set aside.
  2. Sauté Vegetables: Drizzle the remaining 1 tablespoon of olive oil onto the hot skillet. Add the sliced red and yellow bell peppers along with the sugar snap peas. Cook the vegetables until they are tender but still crisp, about 5 minutes, stirring frequently to ensure even cooking.
  3. Prepare the Sauce: While the vegetables cook, whisk together the soy sauce, honey, sriracha, tomato paste, apple cider vinegar, sesame oil, minced garlic, crushed red pepper flakes, and black pepper in a small bowl. Set this firecracker sauce aside.
  4. Combine and Simmer: Return the cooked chicken to the skillet with the vegetables. Pour the prepared firecracker sauce over the mixture and stir well to coat everything evenly. Bring the sauce to a boil, then reduce the heat to a simmer. Cook until the sauce thickens and all ingredients are well incorporated, about 3 to 4 minutes.
