Description

Delicious and juicy grilled pineapple slices brushed with a sweet and tangy brown sugar, butter, lime, and coconut mixture, finished with flaky sea salt. Perfect as a warm dessert or a tropical side dish.

Ingredients

Scale

Main Ingredients

  • 1 ripe pineapple
  • ⅔ cup brown sugar lightly packed
  • ¼ cup (½ stick) salted butter melted
  • 3 tbsp lime juice about two small limes
  • ¾ tsp coconut extract
  • 2 tsp flaky sea salt

Optional Toppings

  • lime zest
  • vanilla ice cream
  • caramel sauce

Instructions

  1. Preheat the Grill: Preheat your grill to medium heat, aiming for a temperature between 300 and 350 degrees Fahrenheit to ensure even cooking without burning.
  2. Prepare the Pineapple: Peel, core, and slice the pineapple into ½ inch thick rings. Typically, you will get about 12 rings from one pineapple, depending on size.
  3. Make the Glaze: In a medium-sized bowl, whisk together the brown sugar, melted salted butter, lime juice, and coconut extract until well combined.
  4. Brush and Season: Generously brush both sides of each pineapple ring with the brown sugar glaze. Sprinkle flaky sea salt over each side to enhance the flavors.
  5. Grill the Pineapple: Place the pineapple slices on the preheated grill and cook for 2-3 minutes on each side until caramelized and warm.
  6. Serve: Plate the grilled pineapple slices while warm. Optionally add lime zest, vanilla ice cream, or caramel sauce for extra indulgence.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can freeze leftover grilled pineapple for up to 6 months; it makes a great frozen treat.
  • If you don’t have access to a grill, a grill pan or regular skillet on the stove over medium heat can be used instead.
  • Make sure to turn pineapple slices carefully to avoid breaking them apart on the grill.
  • Adjust the amount of coconut extract to your taste preference for a more or less pronounced flavor.
