Description

These Holiday Rice Krispie Treats are a festive twist on a classic snack, combining gooey marshmallows, crispy cereal, colorful holiday M&M's, and sprinkles, all drizzled with creamy white chocolate for an extra special touch.   • 6 tablespoons salted butter
  • 16 ounces mini marshmallows, divided
  • 1 teaspoon pure vanilla extract
  • 6 cups Rice Krispies cereal
  • 1 ¼ cups holiday M&M's, divided
  • ¼ cup holiday sprinkles
  • 5 ounces Ghirardelli white chocolate melting wafers, melted (1/2 bag)


Instructions

  1. Prepare baking dish: Line a 9-inch square baking dish with parchment paper and set aside to ensure easy removal of the treats later.
  2. Melt butter and marshmallows: In a large saucepan over medium heat, melt the butter. Once melted, add all but 1 cup of the mini marshmallows. Reduce heat to low and stir continuously until marshmallows are completely melted and the mixture is smooth.
  3. Add vanilla and cereal: Remove the saucepan from heat and stir in the pure vanilla extract. Then add the Rice Krispies cereal along with the remaining 1 cup of marshmallows and gently fold together until well combined.
  4. Mix in candies and sprinkles: Fold in 1 cup of holiday M&M's and all of the holiday sprinkles evenly into the mixture.
  5. Press mixture into dish: Pour the cereal mixture into the prepared baking dish. Using your fingertips, gently press the mixture evenly into the pan without compacting it too hard.
  6. Add toppings and chill: Drizzle the melted white chocolate over the top and sprinkle the remaining ¼ cup of holiday M&M's on top. Optionally, add a pinch of extra sprinkles for decoration. Allow the treats to set at room temperature for one hour before cutting and serving.

Notes

  • You can use any variety of holiday M&M’s, such as milk chocolate or peanut butter; however, peanut butter M&M's may add extra crunch.
  • Always use fresh marshmallows and cereal to ensure your treats are soft and fresh, as stale ingredients lead to stale treats.
  • Jimmies (little log-shaped sprinkles) are preferred for their soft texture and appearance; quins (flat circle or shaped sprinkles) are also suitable. Avoid nonpareils for best results.
  • Feel free to swap out holiday candy and sprinkles to suit any holiday or theme you prefer.
