Honey Garlic Chicken Skewers are tender pieces of chicken marinated in a sweet and savory honey garlic sauce, then grilled on skewers with fresh vegetables and sprinkled with sesame seeds and coriander. Perfect for BBQs or a flavorful dinner served alongside rice or potatoes.

Marinade
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Skewers
- 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare Marinade: Mix all the marinade ingredients together in a small bowl, combining vegetable oil, sesame oil, minced garlic, ginger, dark soy sauce, and honey until well blended.
- Marinate Chicken: Place the chopped chicken breasts in a bowl and pour on three-quarters of the marinade, saving the rest for brushing during cooking. Cover and refrigerate for 1 hour to allow flavors to infuse.
- Prepare Skewers: If using wooden skewers, soak them in water to prevent burning. Heat your BBQ or griddle until very hot.
- Assemble Skewers: Thread chicken pieces alternately with chunks of red bell pepper and onion slices onto the skewers. Repeat until all chicken and vegetables are used, discarding any leftover marinade from the bowl.
- Cook Skewers: Place the skewers on the hot BBQ or griddle and cook for 10 minutes, turning 3-4 times to ensure even cooking. Brush with the reserved marinade halfway through cooking. Check doneness by slicing the largest chicken piece to ensure no pink remains.
- Garnish and Serve: Sprinkle cooked skewers with sesame seeds and roughly torn coriander leaves. Serve immediately with salad and your choice of rice or potatoes.
Notes
- You can marinate the chicken up to a day ahead to deepen flavor, but avoid cooking it early as reheating may dry out the meat.
- Cooked chicken kebabs can be cooled and served cold as part of a salad or wrap for a refreshing meal.
- Substitute the onion and bell peppers with mushrooms, red onion, courgette chunks, or pineapple pieces for different taste and texture.
