A refreshing and naturally sweetened Honey Ginger Lemonade perfect for warm days, combining zesty lemon juice, spicy ginger, and sweet honey with a hint of fresh mint.

Honey Ginger Simple Syrup
- 1/3 cup honey
- 1 cup water
- 1 medium piece fresh ginger, peeled and sliced
Lemonade
- 1 1/2 cups freshly squeezed lemon juice (Meyer lemons preferred)
- 4 cups water
- Fresh mint leaves
Instructions
- Prepare the honey ginger syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add 1/3 cup honey and the sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
- Juice the lemons: While the syrup is steeping, squeeze enough lemons to obtain 1 1/2 cups of fresh lemon juice and pour it into a large pitcher.
- Mix the lemonade: Add 4 cups of water and ice to the pitcher with lemon juice. Strain out the ginger from the syrup and pour the honey-ginger syrup into the pitcher. Stir well to combine all ingredients.
- Add fresh mint and chill: Add fresh mint leaves to the pitcher for aroma and flavor. Refrigerate the lemonade or serve immediately over ice for a refreshing drink.
Notes
- If you prefer a stronger ginger flavor, allow the ginger to steep longer or add additional slices.
- Using Meyer lemons will give a sweeter, less tart lemonade but regular lemons also work well.
- Adjust the amount of honey depending on your desired sweetness level.
- The syrup can be made ahead and refrigerated for up to one week.
- Add sparkling water instead of still water for a fizzy version of this lemonade.
