Description

A refreshing and naturally sweetened Honey Ginger Lemonade perfect for warm days, combining zesty lemon juice, spicy ginger, and sweet honey with a hint of fresh mint.


Ingredients

Honey Ginger Simple Syrup

  • 1/3 cup honey
  • 1 cup water
  • 1 medium piece fresh ginger, peeled and sliced

Lemonade

  • 1 1/2 cups freshly squeezed lemon juice (Meyer lemons preferred)
  • 4 cups water
  • Fresh mint leaves


Instructions

  1. Prepare the honey ginger syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add 1/3 cup honey and the sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
  2. Juice the lemons: While the syrup is steeping, squeeze enough lemons to obtain 1 1/2 cups of fresh lemon juice and pour it into a large pitcher.
  3. Mix the lemonade: Add 4 cups of water and ice to the pitcher with lemon juice. Strain out the ginger from the syrup and pour the honey-ginger syrup into the pitcher. Stir well to combine all ingredients.
  4. Add fresh mint and chill: Add fresh mint leaves to the pitcher for aroma and flavor. Refrigerate the lemonade or serve immediately over ice for a refreshing drink.

Notes

  • If you prefer a stronger ginger flavor, allow the ginger to steep longer or add additional slices.
  • Using Meyer lemons will give a sweeter, less tart lemonade but regular lemons also work well.
  • Adjust the amount of honey depending on your desired sweetness level.
  • The syrup can be made ahead and refrigerated for up to one week.
  • Add sparkling water instead of still water for a fizzy version of this lemonade.
