Glaze

  • 3 garlic cloves, minced

  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

Instructions

  1. Prepare the carrots: Peel and dice the carrots by cutting them on a diagonal into 1 to 1.5 inch pieces; slice thick carrots in half for even cooking.
  2. Preheat the oven: Set your oven to 425°F (220°C) to get it ready for roasting the carrots.
  3. Toss carrots with glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss well to coat all pieces evenly.
  4. Roast the carrots: Spread the glazed carrots out on a heavy-duty sheet pan in a single layer. Roast in the preheated oven for 25 minutes, tossing once halfway through. For extra caramelization, broil the carrots for 2 to 3 minutes at the end.
  5. Serve and garnish: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or your preferred herbs if desired. Serve warm.
