Instructions
- Prepare the carrots: Peel and dice the carrots by cutting them on a diagonal into 1 to 1.5 inch pieces; slice thick carrots in half for even cooking.
- Preheat the oven: Set your oven to 425°F (220°C) to get it ready for roasting the carrots.
- Toss carrots with glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss well to coat all pieces evenly.
- Roast the carrots: Spread the glazed carrots out on a heavy-duty sheet pan in a single layer. Roast in the preheated oven for 25 minutes, tossing once halfway through. For extra caramelization, broil the carrots for 2 to 3 minutes at the end.
- Serve and garnish: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or your preferred herbs if desired. Serve warm.
