Description

Peppermint Bark Rice Krispies Treats combine the classic crispy marshmallow base with festive peppermint extract, crushed candy canes, and a luscious drizzle of dark and white chocolate, making a delightful holiday dessert that’s both easy to make and irresistible to eat.

Ingredients

Scale

Main Ingredients

  • ½ cup salted butter
  • 2 (10-ounce) bags miniature marshmallows
  • ¼ teaspoon peppermint extract
  • 8 cups Rice Krispies cereal
  • ¼ cup crushed candy canes (about 4 candy canes), divided
  • 5 ounces chopped dark chocolate (about ¾ cup)
  • 5 ounces chopped white chocolate (about ¾ cup)

Instructions

  1. Prepare the Pan: Line a 9×13-inch baking dish with parchment paper. Unwrap and crush candy canes carefully, setting aside the divided portions.
  2. Melt Butter and Marshmallows: In a large pot over medium heat, melt the butter. Reduce heat to low and add most of the marshmallows, reserving 1 cup for later. Stir continuously until the marshmallows are completely melted and combined with the butter.
  3. Mix in Flavor and Cereal: Remove the pot from heat. Stir in the peppermint extract, Rice Krispies cereal, 2 tablespoons of the crushed candy canes, and the reserved marshmallows until evenly mixed.
  4. Press into Pan: Transfer the mixture to the prepared pan and press gently into an even layer without compacting. Use the empty butter wrapper, buttered hands, or a spatula to help press out the treats evenly.
  5. Melt Chocolates: In separate microwave-safe bowls, melt the dark and white chocolate by heating in 20-second intervals, stirring between each until smooth.
  6. Decorate Treats: Drizzle both melted chocolates over the pressed Rice Krispies treats. Shake the pan gently to help smooth the chocolate layers. Sprinkle the remaining crushed candy cane pieces on top.
  7. Set and Serve: Allow the treats to set completely at room temperature before slicing into squares and serving.

Notes

  • Store treats in an airtight container at room temperature for up to five days to maintain freshness and chewiness.
  • Freeze individual squares wrapped in plastic wrap in a container for up to two months; thaw at room temperature before serving.
  • Reheat thawed treats briefly in the microwave for a gooey texture, avoiding overheating to preserve the chocolate layers.
  • Prepare up to three days in advance and store covered for convenient holiday entertaining.
