  • 1 red bell pepper, seeded and finely diced
  • 2 tablespoons pickle brine, from the jar

  • ½ teaspoon kosher salt
  • 1 serrano pepper or jalapeno pepper, finely diced


Instructions

  1. Combine Ingredients: To a mixing bowl, add the finely diced baby dill pickles, sweet yellow onion, red bell pepper, pickle brine, minced garlic clove, serrano or jalapeno pepper, and kosher salt. Stir everything together until well combined.
  2. Marinate: Cover the mixing bowl with a lid or plastic wrap and refrigerate the mixture. Allow it to marinate for at least 2 hours to blend the flavors deeply.
  3. Serve: Before serving, stir the Pickle de Gallo again to redistribute juices. Enjoy it as a fresh condiment with tortilla chips or as a flavorful topping for Mexican dishes such as carne asada, carnitas, or birria tacos.
