Instructions

  1. Combine Ingredients: In a cocktail shaker or a large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well until all ingredients are fully combined.
  2. Prepare Glasses: Fill 2 low-ball cocktail glasses (12 oz. each) about 3/4 full with ice cubes to chill the drink properly without watering it down too quickly.
  3. Serve Punch: Pour half of the cocktail mixture (approximately 1 cup each) over the ice in each glass gently to preserve the fizz from the soda.
  4. Garnish and Enjoy: Garnish each glass with a skewer of fresh pineapple pieces to enhance the tropical appeal and serve immediately for best taste.

Notes

  • Store any leftover punch in the refrigerator for up to 24 hours. However, note that the remaining ice will dilute the drink and the soda will lose its fizz.
