Description

Delicious and crispy Reuben Egg Rolls filled with corned beef, Swiss cheese, and sauerkraut, perfect as a flavorful appetizer or snack. These egg rolls can be cooked using an air fryer, stovetop frying, or oven baking and are served best with tangy Thousand Island dressing.

Egg Rolls

  • 12 egg roll wrappers
  • 2 tablespoons oil (for cooking)
  • Thousand Island dressing (for serving)

Filling

  • 500 grams corned beef (approximately 10 slices)
  • 1/2 cup Swiss cheese (or mozzarella cheese, approximately 5 slices)
  • 1/2 cup sauerkraut

Instructions

  1. Prepare the Filling: Dice the corned beef into bite-sized pieces. Dice or shred the Swiss cheese or mozzarella. In a medium-sized bowl, combine the corned beef, cheese, and sauerkraut, mixing until evenly combined.
  2. Assemble the Egg Rolls: Place 1 to 2 tablespoons of the filling in the center of each egg roll wrapper. Dip your finger in water and wet the edges of the wrapper. Fold in two opposite corners toward the center and then roll tightly. Repeat with the remaining wrappers.
  3. Air Frying Method: Brush both sides of the egg rolls with oil. Air fry at 400°F for 10 minutes or until golden brown and crispy.
  4. Stovetop Frying Method: Heat a deep pot with oil over medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown and crispy. Drain on paper towels.
  5. Oven Baking Method: Brush the egg rolls with oil on both sides. Place on a sheet pan lined with foil or on a baking rack. Bake at 400°F for 15 minutes, flipping halfway through and brushing with more oil as needed, until golden brown.
  6. Cool and Serve: Allow the egg rolls to cool for 2 to 3 minutes as the filling will be very hot. Serve with Thousand Island dressing for dipping. Enjoy!
