Description

Instructions

  3. Mix Egg Mixture: In a bowl or large liquid measuring cup, whisk together eggs, milk, chili powder, oregano, salt, and black pepper until well combined. Stir in diced green chiles. Set aside.
  4. Layer Ingredients: Spread frozen potatoes evenly in the prepared baking dish. Top with cooked chorizo, then sprinkle with 1 1/2 cups of the grated Colby Jack cheese.
  5. Add Egg Mixture and Cheese: Pour the egg mixture evenly over the layers in the baking dish, ensuring it covers the ingredients below. Sprinkle the remaining 1 cup of cheese on top.
  6. Bake: Bake in the preheated oven until the cheese has melted and the eggs are set, about 45 minutes.
  7. Rest and Serve: Let the casserole rest for 5 minutes before slicing. Garnish with chopped parsley or cilantro if desired, then serve and enjoy!
