Description

Delicious and spicy Bang Bang Chicken Skewers marinated with a flavorful blend of paprika, garlic, and honey, then grilled to perfection and served with a creamy, tangy, and spicy Bang Bang sauce made from mayonnaise, sweet Thai chili sauce, and sriracha.

For the Chicken

  • 1 ½ pound chicken thighs, cut in 1-inch cubes
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • ½ teaspoon sea salt
  • 1 tablespoon honey
  • 1 tablespoon olive oil

For the Sauce

  • 1 cup mayonnaise
  • juice of half a lemon
  • ½ cup sweet Thai chili sauce
  • ¼ cup sriracha sauce


Instructions

  1. Prepare the Chicken: Cut the chicken thighs into 1-inch cubes and place them in a bowl. Add paprika, garlic powder, onion powder, black pepper, sea salt, honey, and olive oil. Mix well to coat all pieces thoroughly.
  2. Make the Sauce: In a separate small bowl, combine mayonnaise, lemon juice, sweet Thai chili sauce, and sriracha sauce. Stir until smooth. Pour half of this sauce over the marinated chicken and toss to coat evenly. Reserve the other half for serving.
  3. Skewer the Chicken: Thread the chicken pieces onto skewers. Using a brush, coat the skewers with some of the remaining marinade sauce. Set aside while preheating the grill.
  4. Grill the Skewers: Preheat your grill to high heat. Place the chicken skewers on the grill directly over the flame. Grill for 20 minutes, turning the skewers occasionally and brushing them with extra marinade sauce to keep them moist and flavorful. Ensure chicken reaches an internal temperature of 165° F.
  5. Serve the Skewers: Remove the cooked skewers from the grill and transfer them to a serving plate. Serve hot with the reserved Bang Bang sauce for dipping.

Notes

  • For a lighter Bang Bang sauce, substitute reduced fat mayonnaise or replace half of the mayonnaise with Greek yogurt.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • You can use boneless, skinless chicken breasts as an alternative to thighs for a leaner option, but be careful not to overcook.
  • Adjust sriracha quantity to taste for varying spice levels.
