Instructions

  1. Cream butter and sugar: In a mixing bowl, combine room temperature butter and brown sugar. Mix on high speed with an electric mixer for at least 3 minutes until the mixture is light, fluffy, and sugar starts to dissolve.
  2. Add egg and vanilla: Add the large egg and vanilla extract to the butter mixture and continue mixing for 1 minute until fully incorporated and the batter is fluffy.
  3. Prepare graham crackers: Using a blender or food processor, pulse the graham crackers until they turn into a fine powder to incorporate into the dough evenly.
  4. Mix dry ingredients: Add the graham cracker crumbs, all purpose flour, baking soda, salt, and optional cinnamon to the batter. Mix on low speed for about 1 minute until just combined, forming the cookie dough.
