  • 10 oz. can Rotel tomatoes (do NOT drain)
  • 8 oz. spaghetti noodles, uncooked
  • 3 cups water
  • 4 oz. cheddar cheese, shredded
  • ½ cup chopped cilantro


Instructions

  1. Heat the oil and brown the beef: Heat olive oil in a 12-inch skillet over medium heat. Add the ground beef and chopped onions, cooking until the beef is no longer pink and the onions are soft and translucent, about 5-7 minutes.
  2. Add seasoning and liquids: Stir in the taco seasoning and the entire can of Rotel tomatoes with their juice. Then add the uncooked spaghetti noodles and 3 cups of water, ensuring the noodles are mostly submerged.
  3. Simmer the pasta: Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover the skillet, and simmer for 15 minutes until the noodles are tender and the liquid is mostly absorbed.
  4. Incorporate the cheese: Remove the skillet from heat and sprinkle half of the shredded cheddar cheese over the pasta. Stir to melt and evenly distribute the cheese throughout the dish.
  5. Garnish and serve: Top the taco spaghetti with the remaining cheese and chopped cilantro before serving warm.
